Choosing the right size

Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.

Care and cleaning

Let the griddle cool down gradually before cleaning it, and never put a hot griddle in cold water or pour cold water onto it, as the sudden change can crack cast iron. Make sure no water is left on it after washing or cooking.
