Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
High sides and two handles for hob-to-oven cooking
- Deep pan: 5 cm sides on the smaller size and 7 cm on the larger, deep enough for sauces and one-pan dinners.
- Two side handles: wide loops on opposite sides give a steady two-handed lift and take up little room in the oven.
- Pre-seasoned cast iron: ready to cook with, and the seasoning builds with every use.
- Hob and oven: works on gas and induction hobs and goes straight into the oven.
Cast iron is heavy and the handles get as hot as the pan, so keep oven gloves at hand. It is hand wash only and needs drying straight after washing to keep rust away. Do not heat it empty on a high setting on induction. The heat rating is supplier-stated.

Care and cleaning
Wash with hot water and a soft brush, and skip detergent and steel wool so the oil layer stays intact. Dry the pan at once, warm it on the hob and wipe in a little oil. Some dark residue may come off in the first washes: that is carbonised seasoning oil. If rust spots appear, scrub them clean and season the pan again.

Can it go in the oven? Yes. It has no plastic or wooden parts and is heat-rated to 400 °C (supplier-stated).
