Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
Seven corn cob moulds in one tray

Care and cleaning
Before the first use, wash the pan with warm water and a soft brush, dry it on the heat, then rub oil or a piece of pork fat all over the moulds and leave it for several hours to soak in. After each use, clean it with warm water and a soft brush, without detergent or steel wool, dry it over a low heat and wipe on a thin film of oil. If rust appears, scour it away and season the pan again.
