Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
Straight ribs for grill marks, sides that hold the juices
- Raised ribs: parallel ridges lift the food and brand it with grill lines.
- Deep sides: 5 cm walls keep spitting fat inside the pan.
- Two tab handles: short cast handles on opposite sides for a two-handed lift and a compact fit in the oven.
- Hob, oven and open fire: works on gas and electric hobs, in the oven and over an open fire.
Cast iron is heavy, 2.6 kg or 3.1 kg, and the handles get as hot as the pan, so always use oven gloves. It has no lid. Dry it fully after every wash so no water stays on it. Weights are supplier-stated.

Care and cleaning
Let the pan cool down before washing it, as cold water on hot cast iron, or hot water on cold, can crack it. Wash it with warm water and a brush, then dry it completely, warming it briefly on the hob, and wipe on a thin layer of cooking oil before you put it away.

Can it go in the oven? Yes. It is all cast iron with no plastic or wooden parts.
Which size should I choose? The 24 cm pan takes two steaks; the 27 cm pan gives a little more room for a family meal. Both are 5 cm deep.
Does it come with a lid? No, the pan is sold without a lid.
