Choosing the right size

Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.

Let the tray cool, then wipe it with a damp cloth or wash it with a soft sponge. Avoid metal scourers on the coating.

What is the difference between shallow and deep? The shallow tray has a low rim for biscuits and pastries. The deep tray has higher sides for traybakes, bread and roasts.

Which size fits my oven? Measure the inside of your oven first. The 47.5 cm tray needs a wide oven.
